A microwave with a convection function, like the Toshiba EC042A5C, offers multiple ways to cook your meals with one appliance. This 1,000-watt microwave has enough power to reheat food in microwave mode or cook, roast, and bake using the convection function between 170 and 425 degrees Fahrenheit. Featuring 1.5 cubic feet of space, it's large enough to microwave full-size dinner plates or accommodate a small chicken or pizza. A grill rack (for convection mode cooking) makes it easy to get a crispy exterior. People love this unit for its versatility, but others mention that it’s bigger and heavier than expected. It also may tack a few minutes onto recipe cook times when using convection mode.
Every microwave oven contains a magnetron, which generates microwaves. Those waves are then guided into the oven’s cavity, where they bounce around, rapidly swinging the polarity of charged molecules in foods (particularly water, fats, and sugars) and generating heat. Metal mesh on the door keeps those large-wavelength microwaves from escaping the metal box and cooking you. (This great video uses a disassembled model to explain further.)
Water and other homogeneous liquids can superheat when heated in a microwave oven in a container with a smooth surface. That is, the liquid reaches a temperature slightly above its normal boiling point without bubbles of vapour forming inside the liquid. The boiling process can start explosively when the liquid is disturbed, such as when the user takes hold of the container to remove it from the oven or while adding solid ingredients such as powdered creamer or sugar. This can result in spontaneous boiling (nucleation) which may be violent enough to eject the boiling liquid from the container and cause severe scalding.
The defrost options (varying by type or weight) are ideal if you want to warm something up with the microwave before cooking with the convection setting. If you have a busy kitchen and want multiple ways to cook foods (instead of just nuking the occasional popcorn bag), Cuisinart delivers. About the only thing that it’s missing is the ability to set power levels, but with all these other features, that’s a minor quibble to be had.
Fast cooking was our top priority — if a microwave can’t prepare a meal speedily, it isn’t the best. Ray Boxman, Professor Emeritus of Electrical and Electronics Engineering at Tel Aviv University, told us microwaves cook fast “because the microwave energy penetrates into the food, in contrast to conventional heating, which only delivers heat to the surface of the food, and a lot of time is needed for the heat to diffuse inward.”
The GE JES1656SRSS used to be our main pick, but has been discontinued. Its replacement, the new GE JES1657SMSS, did well in our tests overall. However, we found that at 1.6 cubic foot, it’s too big for most things you’re ever likely to cook or reheat in a microwave. That said, this model would be a good option for anyone wanting a unit large enough to fit a 9-by-13-inch casserole dish. Like most microwaves we tested, it didn’t defrost meat well, and it lacks a control to silence the beeping.
Closed containers, such as eggs, can explode when heated in a microwave oven due to the increased pressure from steam. Intact fresh egg yolks outside the shell will also explode, as a result of superheating. Insulating plastic foams of all types generally contain closed air pockets, and are generally not recommended for use in a microwave, as the air pockets explode and the foam (which can be toxic if consumed) may melt. Not all plastics are microwave-safe, and some plastics absorb microwaves to the point that they may become dangerously hot.
In the 1960s,[specify] Litton bought Studebaker's Franklin Manufacturing assets, which had been manufacturing magnetrons and building and selling microwave ovens similar to the Radarange. Litton then developed a new configuration of the microwave: the short, wide shape that is now common. The magnetron feed was also unique. This resulted in an oven that could survive a no-load condition: an empty microwave oven where there is nothing to absorb the microwaves. The new oven was shown at a trade show in Chicago, and helped begin a rapid growth of the market for home microwave ovens. Sales volume of 40,000 units for the U.S. industry in 1970 grew to one million by 1975. Market penetration was faster in Japan, due to a re-engineered magnetron allowing for less expensive units. Several other companies joined in the market, and for a time most systems were built by defense contractors, who were most familiar with the magnetron. Litton was particularly well known in the restaurant business.
We took into account both the best compact microwaves for people with less space and more temporary setups, as well as extra-large models for huge oven ranges. But the inside space matters even more, and for the average microwave we preferred to see capacity at least over 1 cubic foot, if not closer to 1.5. For smaller models we went down to 0.7 cubic feet (although there are impressive models out there that are even smaller).

Microwave heating can be deliberately uneven by design. Some microwavable packages (notably pies) may include materials that contain ceramic or aluminium flakes, which are designed to absorb microwaves and heat up, which aids in baking or crust preparation by depositing more energy shallowly in these areas. Such ceramic patches affixed to cardboard are positioned next to the food, and are typically smokey blue or gray in colour, usually making them easily identifiable; the cardboard sleeves included with Hot Pockets, which have a silver surface on the inside, are a good example of such packaging. Microwavable cardboard packaging may also contain overhead ceramic patches which function in the same way. The technical term for such a microwave-absorbing patch is a susceptor.
Consider both a microwave's dimensions and capacity as you shop. If you’re looking for an OTR or built-in model, it’s important to choose the proper size for the space, especially if you’re replacing an existing microwave. Also, make sure to check that the door has clearance to open. You have more leeway if you’re buying a countertop model, but it’s still important to measure that area in your kitchen.

A great microwave oven can cook food and heat food. The Quick Touch is a little expensive at $250. Amazon reviews also warn that the words printed on the buttons can wear off after years of use … but we actually liked the implication that this microwave will last long enough for some surface-level wear. If you’re going to pay more for an appliance it should be long-lasting and awe you with its usability and features — the Quick Touch did that for us.
If your primary concern is cooking speed, you need a microwave with higher wattage. The unit has to be large enough for your family's needs but not too large to fit in your kitchen. It is desirable to have quick keys, multi-stage cooking, and true variable power. Easy cleaning is a must because, at some point, you will need to wipe up after a cooking job.
Like the 0.9-cubic-foot model, this Toshiba has one-touch start buttons from 1 to 6 minutes, a plus-30-seconds button, and a child-lock function. This model also shares several other features with the smaller Toshiba, such as a memory function and a multistage cooking function—but, realistically, we don’t think most people will use these controls often.
The radiation produced by a microwave oven is non-ionizing. It therefore does not have the cancer risks associated with ionizing radiation such as X-rays and high-energy particles. Long-term rodent studies to assess cancer risk have so far failed to identify any carcinogenicity from 2.45 GHz microwave radiation even with chronic exposure levels (i.e. large fraction of life span) far larger than humans are likely to encounter from any leaking ovens. However, with the oven door open, the radiation may cause damage by heating. Every microwave oven sold has a protective interlock so that it cannot be run when the door is open or improperly latched.
Different microwaves are designed for different locations. A countertop microwave sits on top of your kitchen counter. Like most microwaves we tested, the Toshiba wasn’t great at defrosting meat. This model doesn’t beep to remind you to flip the meat halfway through heating, so if you forget, the results are pretty unappetizing. The ground beef we attempted to defrost in this Toshiba remained partially frozen in the center, while the edges were slightly cooked. For that reason, we don’t ever recommend using a microwave for defrosting meat unless you absolutely have to. It’s always best to thaw meat in the fridge or under cold running water. That said, we still think the defrost mode is great for quickly thawing frozen bread or bagels.
Ever wondered how microwaves heat up food so quickly and efficiently? These appliances contain a part called a magnetron, which uses electricity to create high-powered radio waves. The waves are pushed into the microwave’s interior, where they bounce off the metal walls and penetrate whatever food you’re cooking. The turntable spins to help the waves hit the food from all angles, and this process makes the molecules in the food vibrate, warming them up. However, one of the downsides of microwave cooking is that radio waves can only travel a few centimeters into your food, so larger items don’t always cook evenly.

Some magnetrons have ceramic insulators with beryllium oxide (beryllia) added. The beryllium in such oxides is a serious chemical hazard if crushed then inhaled or ingested. In addition, beryllia is listed as a confirmed human carcinogen by the IARC; therefore, broken ceramic insulators or magnetrons should not be handled. This is a danger if the microwave oven becomes physically damaged, if the insulator cracks, or when the magnetron is opened and handled, yet not during normal usage.
This microwave tells you exactly how long your food is cooking — a feature that seems like a given, but isn’t. When we cooked potatoes in testing, some of the microwaves with moisture sensors would cook for as long as five minutes with a few dots circling around the display, no indication of time. If you’re trying to follow a recipe or keep an eye out for overheating, these displays make it difficult to keep track of time.
Our microwave oven tests found big differences in overall performance among models. To test heating we warm up mashed potatoes, and we use frozen ground beef to test defrosting. We also test speed of heating, noise, and ease of use. We measure usable capacity, too. (Manufacturers often include space you can't use.) Plus we test how well the over-the-range models vent.
You may be a bit limited in your choice of OTR microwaves because you’ll need a model that fits snugly above your stove. Most people also want an appliance that matches their range. And, unfortunately, OTR microwaves are more complicated to install, especially if you haven’t had one before. In these instances, you may need to hire an electrician, which can drive up the overall cost of your new microwave.

Any object containing pointed metal can create an electric arc (sparks) when microwaved. This includes cutlery, crumpled aluminium foil (though some foil used in microwaves is safe, see below), twist-ties containing metal wire, the metal wire carry-handles in paper Chinese take-out food containers, or almost any metal formed into a poorly conductive foil or thin wire, or into a pointed shape. Forks are a good example: the tines of the fork respond to the electric field by producing high concentrations of electric charge at the tips. This has the effect of exceeding the dielectric breakdown of air, about 3 megavolts per meter (3×106 V/m). The air forms a conductive plasma, which is visible as a spark. The plasma and the tines may then form a conductive loop, which may be a more effective antenna, resulting in a longer lived spark. When dielectric breakdown occurs in air, some ozone and nitrogen oxides are formed, both of which are unhealthy in large quantities.
The 1.2-cubic-foot Toshiba didn’t heat as evenly as the smaller Toshiba. Unlike the 0.9-cubic-foot version, this Toshiba uses a steam and temperature sensor to automatically determine cooking time. However, we didn’t find the sensor particularly accurate: The baked potato we cooked using it came out completely raw in the center. In our heat map test, the marshmallows near the center of the turntable came out very dark. That said, it heated more evenly across the surface of the turntable than most of the microwaves we tested. The popcorn we made wasn’t burned, though it did have twice as many unpopped kernels as the 0.9-cubic-foot model. We liked that this model beeps to prompt you to flip meat while defrosting, something the smaller one doesn’t do. Impressively, this Toshiba only slightly cooked the edges of ground beef on the defrost mode, unlike most of the models we tested, which fully cooked entire sections of meat.
Some current plastic containers and food wraps are specifically designed to resist radiation from microwaves. Products may use the term "microwave safe", may carry a microwave symbol (three lines of waves, one above the other) or simply provide instructions for proper microwave use. Any of these is an indication that a product is suitable for microwaving when used in accordance with the directions provided.
Microwave ovens come in a variety of styles to fit all your home decor needs. It doesn’t matter if we are talking about otr microwaves or countertop microwaves. If you really want microwave power levels that function accurately, look for a microwave with an inverter. What is an inverter microwave? Essentially, it uses a different type of microwave production that actually does change the power levels and heating. Set power to 5, and the inverter will make sure heating is at 50%. Other types of microwaves will use a cycling method, where the power is always set to 100% but at level 5 it cycles half as much as at level 10. Inverter technology tends to make power levels much more effective and sensible, but either way it’s important to know what you’re getting into.
