To find out what makes a great microwave, we spoke to Sharon Franke, former director of the Kitchen Appliances and Technology Lab at Good Housekeeping; appliance expert Chris Zeisler of RepairClinic.com; cookbook author Leslie Bilderback, who wrote Mug Cakes: 100 Speedy Microwave Treats to Satisfy Your Sweet Tooth; and product managers at both Panasonic and GE. There are two types of microwave vent systems: recirculating and external. Recirculating vents simply pull the air up into the appliance, run it through a filter to remove impurities, then push it back out into your kitchen. This type of ventilation system is ductless and easier to install, but it doesn’t perform as efficiently as external ventilation. 
You may be a bit limited in your choice of OTR microwaves because you’ll need a model that fits snugly above your stove. Most people also want an appliance that matches their range. And, unfortunately, OTR microwaves are more complicated to install, especially if you haven’t had one before. In these instances, you may need to hire an electrician, which can drive up the overall cost of your new microwave. 
The GE JES1656SRSS used to be our main pick, but has been discontinued. Its replacement, the new GE JES1657SMSS, did well in our tests overall. However, we found that at 1.6 cubic foot, it’s too big for most things you’re ever likely to cook or reheat in a microwave. That said, this model would be a good option for anyone wanting a unit large enough to fit a 9-by-13-inch casserole dish. Like most microwaves we tested, it didn’t defrost meat well, and it lacks a control to silence the beeping.

If your microwave is broken, do not attempt to repair it yourself. Microwaves are dangerous to tamper with and should be serviced by professionals because the magnetron can retain a hazardous charge even when it isn’t plugged in. Most microwave manufacturers discourage people from even changing the light bulbs. But realistically, it’s probably cheaper and less of a hassle to buy a new microwave than to have it repaired.
Reviewers of this multipurpose microwave celebrate its great value. “This is the best microwave I’ve ever owned under $200. It works great and it arrived in less than 24 hours. Color me impressed,” writes one. In addition to microwaving food, it includes a convection function for baking or roasting and a broil setting with a removable grill rack. “This oven seems to do everything that I wanted it to do. It … makes fast work of anything I put in it,” says one. “The browner element on the top is just icing on the cake.” Another happy customer writes: “This was my only way to cook for six weeks during flood repair of my kitchen. We were able to have normal meals without going out every time.”

In our heat map test, the Toshiba produced the most even heating pattern of all the microwaves we tested, perfectly browning the layer of marshmallows from edge to edge. It expertly cooked a baked potato in about 6 minutes, which was average for the microwaves we tried. It also reheated beverages well and perfectly cooked frozen macaroni and cheese. And it made tasty popcorn, with only 5 grams of kernels left unpopped, which was on a par with most of the models we tested. This model allows you to defrost by time or weight, but like most of the microwaves we tested, it didn’t defrost meat well.
The best size microwave for you will depend on how much space you have available and how much food you'll need to heat up at a time. If your space is limited or you're only heating food for one person, a 0.5 cubic-foot model may be a good choice. If you're furnishing a gourmet kitchen, you may want a 2.5 cubic-foot combination microwave-convection oven.

The second problem is due to food composition and geometry, and must be addressed by the cook, by arranging the food so that it absorbs energy evenly, and periodically testing and shielding any parts of the food that overheat. In some materials with low thermal conductivity, where dielectric constant increases with temperature, microwave heating can cause localized thermal runaway. Under certain conditions, glass can exhibit thermal runaway in a microwave to the point of melting.[41]
Like the 0.9-cubic-foot model, this Toshiba has one-touch start buttons from 1 to 6 minutes, a plus-30-seconds button, and a child-lock function. This model also shares several other features with the smaller Toshiba, such as a memory function and a multistage cooking function—but, realistically, we don’t think most people will use these controls often.
Microwave ovens heat food without getting hot themselves. Taking a pot off a stove, unless it is an induction cooktop, leaves a potentially dangerous heating element or trivet that will stay hot for some time. Likewise, when taking a casserole out of a conventional oven, one's arms are exposed to the very hot walls of the oven. A microwave oven does not pose this problem.

When shopping for the right model, consider the size, price, and type (countertop or over-the-range), depending on your kitchen space. Over-the-range microwaves are usually mounted over your stovetop, and they have a light and ventilation underneath. Depending on the model, you can also have the countertop or over-the-range microwave built into your kitchen setup. The options are limitless, fam.
When looking at midsize models, we only considered microwaves with a minimum of 900 to 1,000 watts. Good Housekeeping and RepairClinic.com both reported that midsize microwaves with cooking power lower than 1,000 watts are significantly slower and cook much less evenly. However, just because a microwave has the highest wattage on the market does not necessarily mean that it will cook the fastest or the most evenly; these qualities depend to a great degree on how efficiently the microwave is programmed and how the microwaves themselves are delivered. A smaller machine, by contrast, can potentially get away with somewhat less power; the small GE microwave (at 0.7 cubic foot less than half the size of most of the midsize models we tested) runs at 700 watts and heated very evenly in our tests. Bottom line? Numbers count less than real-world results.

Compared to liquid water, microwave heating is less efficient on fats and sugars (which have a smaller molecular dipole moment).[31] Sugars and triglycerides (fats and oils) absorb microwaves due to the dipole moments of their hydroxyl groups or ester groups. However, due to the lower specific heat capacity of fats and oils and their higher vaporization temperature, they often attain much higher temperatures inside microwave ovens.[30] This can induce temperatures in oil or very fatty foods like bacon far above the boiling point of water, and high enough to induce some browning reactions, much in the manner of conventional broiling (UK: grilling), braising, or deep fat frying. Foods high in water content and with little oil rarely exceed the boiling temperature of water.
Performance aside, simply using this microwave is a lot of fun. The buttons and dials have a satisfyingly crisp click to them, similar to punching letters on a typewriter. The Breville also features some extra convenience with a designated noise level button for one-push incognito mode, and a button labeled “A Bit More” that adds 20 seconds to the cook time.
Many reviewers of this Panasonic microwave oven rave about its power, efficiency, and spacious interior. “We have been totally delighted with this microwave,” writes one. “We have had to scale back cooking times because of the incredible cooking power. The spacious interior and ease of use are just the best.” Another says, “Constant microwave power emission cooks to total satisfaction with no cold spots. Baked potatoes are the best I’ve ever had in my life, and I’m old, smooth, creamy, uniform texture throughout. No overdone skins. Sensor cooking works too. At this price, it’s a steal.” Part of what sets this microwave apart is the stylish stainless-steel front, with several reviewers noting that it “blends in well with a kitchen with stainless-steel appliances and black, as well.”
There are three main styles of microwaves, and they’re distinguished predominantly by where and how they’re installed. First, there are your standard countertop microwaves, which simply sit on the kitchen counter and are plugged into an electrical outlet. This style is often the least expensive and works best for anyone who lives in a rented home, as they can be moved easily. Countertop microwaves are also a good option if you don’t want to remodel your kitchen to accommodate a built-in style.

Microwave heating can cause localized thermal runaways in some materials with low thermal conductivity which also have dielectric constants that increase with temperature. An example is glass, which can exhibit thermal runaway in a microwave to the point of melting if preheated. Additionally, microwaves can melt certain types of rocks, producing small quantities of molten rock. Some ceramics can also be melted, and may even become clear upon cooling. Thermal runaway is more typical of electrically conductive liquids such as salty water.[32]
